laphing is rarity i discovered during my visit to a tibetan settlement (bylakuppe). it’s a combination of flat noodles and a chilli-heavy broth with your choice of meat- and it comes in both dry and wet variety (i personally prefer the dry one).
it’s a heavenly dish if you don’t mind a little heartburn from the excessively thick and choking spiciness. eat it once in a while – eating it too often can give you more than just heartburn and toilet trouble!
